I think,what Stef means (and I too!) is not the text-toolbar of Servoy, but the Windows 95/98/2000/XP Toolbar (mostly at the bottom) with the famous START-button.
This Toolbar is dissapearing when you run Filemaker in KIOSk-mode
very annoying!

But the option to keep up the Win toolbar would be nice as well, but I think it’s really hard to do that.

I don’t know if this is what you mean but here you’ll find a (free) JavaBean wich supports menu’s.
SmartMenu component adds personalized menus functionality to the standard swing menu components. SmartMenus adapt themselves to the user usage pattern in order to reduce the number of menu items by exposing only the most used ones. For example the component remembers which were the menu items that were used and hides the other ones. This component integrates with the most common IDEs.
