From the link you provided, it seems JRockit is functionally compatible with Suns inplementation: The site says that JRockit just overrides some of the classes to increase performance.
So, in theory, there should be no problem running Servoy on it.
More interestingly: JRockit and Sun’s JRE’s now both belong to Oracle and according to your link Oracle plans to merge it’s performance fixes in JRockit back into the SUN JRE version.

JRockit’s perfomance is now, highest than SUN JRE. So, if done, it will be a great new!!! .

One of the very interesting thing in JRockit is the way it deals with the PermGenSpace: it is garbage collected, and the size is not fixed as it is on Sun’s JRE - two major pain.
And generally there are more option for garbage collecting strategies, so for a server I would say that it’s worth the shot trying Servoy on it!
