Has anybody any experience with using Servoy and Sybase offline, so sales people can use the app on the road and then link up later- if so can anybody give me a pointer on how this works and what steps I need to take to put it in place.

You should take a look at the SQL Anywhere Studio MobiLink technology. This enables you to synchronize your remote databases ideal for the enviroment that you described.
Servoy does not include the MobiLink technology but you can download and develop with it for free with the SQL Anywhere Developer Edition in combination with Servoy. The product manuals have a tutorial for MobiLink. The documentation can be found at the following URL.
